WRONG! we have the technology now to run sustainable businesses. So why aren't we doing it. I know its not cheap in the short term, its not what the Jones are doing, its not .......... oh stuff the excuses. I'm building BlackBar as a sustainable business because i CAN and because its what i believe in. I don't want to ram tree hugging madness down every bodies throats i just want to quietly say "i did it this way and it works try it." So for you out there and to my old friend that started this with an email this morning (you know who you are and you have been reprimanded) here is a list of the things that are important to me and this project, just so you know.
1 - Quality Beer
2 - Doing it my way (no jokes on old blue eyes songs please)
3 - Doing it sustainably because i can.
4 - It will happen when its ready not before, that includes the beers.
5 - For a lifestyle, for ALL the staff.
6 - Because some people have told me its not possible.
